Fish
Gefilte Fish
For those who do not like the fishy taste try the following recipe. It's easy to prepare and tastes delicious.
Ingredients
1 Frozen fish log
2 slices large onions
2 tomatoes
4 peppers
4 carrots
Half cup of sweet and sour duck sauce
Eighth cup of white wine
Parsley leaves
Preparation
Boil the fish log for an hour
without taking off the paper wrapping.
In a medium sized oval casserole make a bed of onions and place the fish log on top.
Slice and quarter the tomatoes, place all around and on top of the log.
Cut the peppers into small pieces and place them around and on top of the log. Slice the
carrots and place them around and on top of the log as well.
Mix half
a cup of sweet and sour sauce with an eighth of a cup of white wine.
Cover the fish log completely with the sauce and pour the rest into the casserole.
Decorate the fish log with parsley leaves.
Cook in preheated oven for 50 minutes at 350 degrees.
There are 10 servings per log.

Side Dishes
Aunt Rose's Spanish Rice
Ingredients
1/2 chopped onion
1/4 cup chopped celery
1/3 cup diced green/red/yellow peppers
1/4 cup diced tomato
2 tablespoon margarine
1 cup long grain rice
1 cup water
1/2 teaspoon salt
Dash of pepper to taste
Preparation
In a 2 quart pan cook onion,
celery, and peppers in margarine till tender.
Add diced tomatoes, then rice, salt and pepper. Mix till blended .
Add water, cover pan, & bring to boil. Reduce heat and simmer about 15 minutes, until
liquid is absorbed.
When slightly cooled, transfer rice to 2 quart
casserole dish.
Cover and bake in a 350 degree oven for about 20 minutes, fluff occasionally till rice is
done.
Serves about 6.

Yerushalmi Kugel
Ingredients
12oz. pkg. thin noodles
1/2 cup of oil
1 1/4 cup of sugar
salt and pepper to taste
Preparation
Cook noodles. rinse and drain.
In a separate pot pour oil and sugar.
Set on low to medium flame for approximately 20 min. till sugar is liquid and brown.
Add noodles slowly into the sugar mixture and stir till brown on low flame.
Let it stand until it cools.
Add eggs, salt, and pepper.
bake in 9x13 greased pan at 3500 for one hour.

Main Dishes

Veal and dumplings casserole
Ingredients
2 lb. breast of veal
1 tablespoon margarine
1 finely chopped onion
¾ cup of soup stock
1 cup of red wine
1 cup mushrooms
pinch of dried herbs
pinch of cloves
¼ teaspoon pepper
¼ teaspoon salt
Dumplings
1 cup self-rising flour
pinch of salt
pinch of pepper
pinch of mixed herbs
2 tablespoons margarine
soup stock
Preparation
Cut the meat in pieces.
Melt the margarine in a pan, brown the meat and the onions.
Remove the meat from the pan and put in a casserole.
Add the flour and mix well.
Add the soup stock and red wine, bring everything to a boil.
Add the mushrooms, herb and sesonings
Cover the casserole and put in a 3250 oven for 1½ hours.
Mix flour and sesonings to make
the dumplings
Rub in the margarine
Mix to a dough with the soup stock.
Form into balls.
Place on the meat in the casserole, replace the cover.
Cook for another ½ hour.

Desserts
CRANBERRY
APPLE CRISP
Topping:
3/4 cup flour
1/2 cup sugar
1/2 cup margarine
Mix the above ingredients until they form a crumbly mixture.
Ingredients:
1 bag fresh cranberries
2 apples (peeled and sliced)
1/2 cup sugar
Preparation:
Mix these 3 ingredients in a 9x9 inch pan and place the crumbly
mixture on top of it.Bake uncovered in 350 degree oven for 40 minutes
(until it is light brown on top).
*HELPFUL HINT: Buy cranberries while they are in season and
freeze
them. They stay well in the freezer for up to 6 months and there is no
need to defrost them first.

CRANBERRY
DELIGHT
(So berry delightful!)
Ingredients:
1 package of Blackberry or
Raspberry jello
1 can whole berry cranberry sauce
1 can crushed pinneaple
Preparation:
Dissolve 1 package of either blackberry or
raspberry jello in 1 cup hot
water. Stir in 1 can whole berry cranberry sauce and 1 can crushed
pineapple (drained). You can also add mandarin oranges. Refrigerate
several hours, serve with chicken or turkey.
